In this season of giving, there’s probably not a sweeter gift than those produced in nature. One of the planet’s most perfect and miraculous raw materials, honey is one of the earth’s most delicious, nutritious, and infinitely precious resources of all. 


A sweet and viscous substance made by many types of bees, the best-known of which are honey bees, there are as many types of honey as there are bees, each variation getting its flavor from the flowers that give the bees their nourishment. The nectar from each type of blossom produces a unique and distinctive honey,  each with its own flavor, color, and mouthfeel.




The rugged countryside of Spain, for example, produces honey that gets its character from rosemary, lavender, and heather bushes and orange, chestnut, and almond trees, all of which produce honey with intense aromatic flavors and color, ranging from light amber to dark chestnut.



French honey, which is generally darker, stronger in flavor, and less acidic than Spanish honey, comes primarily from the fields of Provence, Corsica, and Languedoc-Roussillon. Other honey varieties include Lemon, Orange, Lavender, Buckwheat, Black Cumin, Black Forest, Royal Jelly,, Sourwood, Leatherwood, Tupelo, Manuka, and Acacia, as well as Ceder, Ghaf and Samar Tree, AKA Acacia Tortilis,  from the United Arab Emirates. 


With health and healing properties, honey aids in the treatment of upper respiratory infections, viruses,  and the flu by providing soothing  relief to ease sore throats, reduce pain, and decrease inflammation, as well as antioxidant and anti-aging benefits. 


In nature, bees produce honey by gathering and then refining the sugary secretions of floral nectar or other insects. This refinement takes place both within individual bees and during storage in the hive.  

 

With the same relative sweetness as sucrose, honey’s high concentrations of the monosaccharides fructose and glucose give it its natural candy-like flavor.
